This is a sandwich that was inspired by one we had while in London on our honeymoon. It was, without hesitation, the greatest grilled cheese I have had in my entire life. The sharp cheese and tangy onion mixture oozing out the tiny holes in the crunchy bread was so amazing that upon our return my new husband and I found ourselves craving it. Not being able to return to Borough market I decided to take a stab at making it myself. This is the result and while not exactly like the one in London, it is pretty dang close and kills our craving without the need of a $1500 plane ticket.
For this recipe you will need:
4 oz Sharp Cheddar – Obviously English Cheddar works best here
1 large shallot
4 slices of Artisanal Sourdough Bread – Sliced, white bread from a bag does not work here
1 tbs butter
Step 1: Shred the Cheese and the Shallot and mix together
Step 2: Place the Cheese and Shallot mixture between the slices of bread to make a sandwich.
Step 3: Place skillet over medium to medium low heat
Step 5: Place sandwiches in skillet, cook for 1 minute on each side, or until the bread is golden brown on both sides.
Step 6: Serve! I like mine with tomato soup or a nice arugula salad.
